It’s easier to think about lighter meals when the weather woos you in that direction. Either you want to cook outdoors on the grill or you want to prepare something really easy indoors that doesn’t require a lot of stove time. Yesterday I leaned toward little stove time because the rain was a deterrent to outside grilling.

Barilla whole grain pasta, with Bumble Bee albacore tuna, Imagine light in Sodium Butternut Squash soup, and organic Spring Mix salad greens, chilled glass of lemon water. It looks great; tastes great and my kids loved it!

Good eating doesn’t have to be complicated. Besides you have enough on your mind other than trying to make an elaborate Sunday meal. Cut yourself some slack. Change the game. Change the menu. Serve it on paper plates or go all fancy and break out those dishes you only maybe use during the holidays.  YOU can do whatever suits you.

I use Barilla grain pasta for my spaghetti noodles too! Love the presentation and that is something else I used to key on. I think that if it looks good then it will taste good (except for liver, which is ALWAYS nasty!! :0) )
